Pam & Blakeley's Brownies with Stewed Figs

SHEARING THE VINES RECIPE - BROWNIES & STEWED FIGS

BLAKELEY'S BROWNIE 
(makes 12)

INGREDIENTS

150g Butter
1 cup brown sugar
2 eggs
½ cup plain flour
½ cup cocoa powder
1 tsp Malden Sea Salt
½ cup Dark chocolate (either chips or chopped chocolate bar)
METHOD

Cream together butter and sugar
Slowly add eggs one at a time
Mix in the dry ingredients, careful not to over mix (just combine them)
Pour into an 18cm x 18cm tin (greased)
Bake at 160C for 25 – 30 minutes (they should still be soft, but not liquid)
PAM'S STEWED FIGS

INGREDIENTS

2kg figs
3 cups water
½ cup vinegar
1.5 cups sugar
1 packet of glace ginger
'The Ruffian' Liquer Muscat
METHOD

Bring all the ingredients above (minus the figs & The Ruffian) to the boil and simmer for ½ hour.
Throw in the figs and a generous slurp of 'The Ruffian' Liqueur Muscat 
Simmer for 2 hours.
Serve with a drizzle of cream and a glass of 'The Ruffian' Liquer Muscat - Yum!
