Hugh Hamilton Wines Dinner Party: Entree
Olive, Tomato & Goats Cheese Tart
10 inch pre-baked tart shell
1/2 cup goats cheese crumbled
1/4 cup sun dried marinated tomatoes, chopped
1/4 cup ‘Pam’s Peacemaker’ marinated olives
1 tablespoon crushed garlic
4 whole large eggs
1 cup milk
1 tablespoon dried mixed herbs
Pit ‘Pam’s Peacemaker’ marinated olives and roughly chop
Spread the crushed garlic on the base of the tart shell then sprinkle evenly with the olives, tomatoes and goats cheese.
Whisk together the eggs and milk. Season to taste with herbs, salt and pepper.
Pour the egg mixture over the cheese, olives and tomatoes. Bake in a preheated 180 degree oven for 20-25 minutes or until golden brown. The tart filling should puff up.
Serve with a simple salad or roasted vegetables
Wash down with a cool, refreshing glass of 'The Scallywag' Chardonnay
